First time English post for Valentine's day, with Coffee, Mascarpone and chocolate truffles recepie ;

Since I've started this blog a few months ago, I've had a few and few requests from friends and family around the world to start posting in English.
I'm going to start by reassuring my Israeli and other Hebrew speaking followers that the blog is not going to be written in English from now on.
I just thought it could be a nice gesture I can handle once in a while, and also a good practice for my English writing.
And for you English readers; I hope you'll enjoy this post, though it's not a usual one. And do appreciate my effort! (Just kidding, or not…)

So, this post is dedicated to Valentine's Day.
Yes, I know "It's a cheesy day invented by the film/television/music/food/whatever industry, and made to take money out of us innocent people". I've heard that enough!
And yes, I'm also aware of the fact that it is not a Jewish holiday, and that we have our own love day, celebrated in the summer ("Tu BeAv" celebrated in the hebrew month of Av, usually in August-September).

On one hand, I'm one of those people who think we don't need a special day to show and celebrate love. It's something we should do all the year around.
On the other hand, I think there is no harm in celebrating for another day. Someone has given us a reason, let's use it!
I also think you don't have to make big dill out of this day. Some simple and symbolic gestures are enough.
Like let's say...
These Truffles!

YES!
Making something sweet for the person you love is always a romantic nice thing. Unless, of course that person does not like sweets. But then you defiantly have to reconsider your love to him/her (This time I'm not kidding).
If you make it as a dessert after a romantic dinner, that's even better.
But let's not go over the top here, and stick to the truffles.

So...What do we have here?
Coffee- Good!
Mascarpone cheese- Great!
Dark chocolate- Yummy!
Milk chocolate coating- Even better!
And some sprinkles, cause they never hurt, and so fun to look at!

These truffles are truly divine and very (very) easy to make.
Go ahead and make them for the people you love: It can be your lover, your family, your friends or whoever makes you happy.
And PLEASE, don't make them just on Valentine's Day :)

Have a wonderful and loving Valentine's Day.
See you in my next English post :)

Coffee, Mascarpone and Dark chocolate Truffles, with Milk chocolate coating/ (Makes 30-40 truffles)
Recepie translated and adapted from here

For the Truffles:
150 grams Dark chocolate
250 grams Mascarpone cheese, at room temperture
2 Tablespoons coffee (Espresso or instant), melted in 2 tablespoons of hot water, and then cooled.
1 cup ground almonds or hazelnuts (with no skin).

For the coating:
200 grams Milk chocolate
2 tablespoons oil
*Optional: sprinkles, chopped nuts for decoration

Method:
Truffles-
1. Melt the dark chocolate in the Microwave or on a Bain-Marie (water bath). If you do it in the microwave, break the chocolate to cubes and put in for 20-30 seconds each time. Take out and stir, and then continue.
After the chocolate is completely melted, leave it at room temperature for a few minutes, to chill.
2. Add the Mascarpone to the chocolate and stir for a few seconds, until the mixture is a bit fluffed. Don't over mix.
3. Add the coffee and mix for a few seconds.
4. Add the ground almonds/nuts and mix until evenly combined in the mixture.
5. Cover with plastic foil and refrigerate for at least 1 hour. The best is 2-3 hours.
6. When mixture is cold, take out and shape into small truffles (2-3 centimeter diameter balls). Place the truffles on a clean baking paper, placed on a baking sheet or a big plate.
7. Let sit in the fridge until coating is ready.
Milk chocolate coating-
1. Melt the Milk chocolate the same way as the dark one. Better to do it in a deep small bowl, convenient for dipping. When the chocolate is completely melted, stir in the oil.
2. Using a fork, dip every truffle in chocolate, then hit the fork gently on the side of the bowl to remove excess chocolate. Place the covered truffles back on the baking paper.
3. Sprinkle or decorate in your own way. I used sprinkles and chopped nuts.
4. Let cool in the fridge for at least 15 minutes.
5. Keep the truffles in a well sealed box in the fridge, up to 7-10 days.

* I didn't have enough milk chocolate, so I covered some of my truffles with cocoa powder. The result was less sweet but still very good!
* If you prefer dark or white chocolate for the coating, you can use it instead of the milk chocolate.
* You can switch 1/2 tablespoon of coffee (and water) with a tablespoon of coffee liquor, rum or other alcohol.
